I am a young, pregnant, diplomat-in-training, living in a tiny apartment in Washington DC. After spending six years in West Africa, I’m lost in the sea of processed foods and mediocre produce that fills American supermarkets. In February, my husband, newborn, and I will ship back out to Freetown Sierra Leone. We can’t wait!
I cook with (almost) all natural ingredients and I do my best to avoid processed snacks (crackers, power bars, granola bars, etc.). I recreate them myself, with varying success. These are rarely low-fat. I use them as meal substitutions. I’d rather eat a smaller serving size of a decadent recipe, than a large portion of a mediocre modified-for-fat recipe.
I’m sure that many of my recipes can be modified for lower fat content or lower calories. Please tell me in the comments! I may not be able to take advantage of your suggestions, but others can.

What do you do in West Africa? Are you from there??
